Ingredients
- 1 1/4-pound eggplant (about 1 medium)
- 3 tablespoons olive oil
- 1/4 cup onions, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 2 cloves garlic, minced
- 1/2 cup raw walnut halves
- 3/4 cup panko bread crumbs
- 3 tablespoons parmesan
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/2 cup ricotta cheese
- 1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
- 1 large egg, lightly beaten
- 1-2 quarts Marinara sauce
